Lavender Sugar Cubes
Delicate, floral, and oh-so-charming, these homemade lavender sugar cubes are perfect for elevating tea, lemonade, or cocktails. Simple to make and beautiful to serve, they also make a lovely handmade gift.

- 1 cup fine sugar or caster sugar
- 1 tablespoon dried culinary lavender buds (or 2 tablespoons fresh lavender buds)
- 1 tablespoon water (adjust as needed)
- 1-2 drops food coloring (optional)
- ½ teaspoon clear vanilla extract or other flavoring (optional)
Prepare the Lavender - Use either dried or fresh buds (make sure fresh is fully dry). For a finer texture, pulse in a food processor or crush with a mortar and pestle.
Mix Sugar and Lavender - Combine sugar and lavender in a bowl. Stir well to evenly distribute.
Add Water - Slowly add water until the mixture resembles moist sand that clumps when squeezed but isn’t soggy. About 1 tablespoon is usually enough.
Fill the Mold - Spoon the mixture into each cavity of your silicone mold.
Press and Compact - Firmly press down the mixture in each cavity, packing tightly. Smooth the tops with a bench scraper or back of a spoon.
Let Dry - Leave the mold in a warm, dry spot for 24 hours to set. Once dry, the cubes should pop right out.
Serve - Arrange in a sugar bowl with tiny tongs for a charming presentation. Serve with tea, lemonade, or cocktails.
- For best shelf life, use dried lavender (fresh lavender may shorten storage).
- Pressing firmly is essential—add, press, then repeat. You may be surprised how much fits once compacted.
- Important: Use Lavandula angustifolia (English Lavender) for safe culinary use.
