Strawberry Mint Bruschetta Dip
This fresh, no-cook dip layers juicy strawberries, chopped mint, and a sweet balsamic drizzle over creamy feta dip. Serve it with crackers or crostini for the ultimate summer appetizer.

- 1 ½ cups fresh strawberries, hulled and diced (¼" pieces)
- ⅓ cup chopped sweet mint
- 1 ½ tablespoon balsamic vinegar
- 2 tablespoon honey
- 8 ozs Premade feta dip (or substitute as listed)
- 1 tablespoon fresh mint tops, for garnish
- crackers or crostini, for serving
Prepare the strawberries: remove the tops, dice into small pieces, and place in a bowl.
Chop the mint using a chiffonade method: stack several leaves, roll, and slice thinly. Add to the bowl.
Drizzle in the balsamic vinegar and honey. Stir gently to combine.
Spread feta dip in the bottom of a shallow serving bowl.
Spoon the strawberry mixture evenly over the dip.
Garnish with fresh mint tops and serve with crackers or crostini.
Notes:
- Substitutes for feta dip: whipped ricotta, goat cheese spread, or cream cheese with olive oil.
- Make the strawberry mixture up to 3 hours in advance, but layer just before serving.
- For a twist, try basil instead of mint or add a drizzle of hot honey.
