Today I’m sharing one of my favorite baked brie recipes. I make this Harvest Baked Brie for most holiday parties and my family loves it! I’ve used frozen puff pastry and Pillsbury crescent roll dough, both make a delicious Baked Brie!

This recipe rates low on the difficulty scale and high on the delivery scale. All that is required is to wrap a wheel of brie cheese in a thawed sheet of puff pastry or crescent roll dough, add a few savory ingredients and bake until golden. The combination of this warm, melted french cheese and crispy pastry is virtually impossible to resist. I typically garnish with Rosemary and serve with a variety of crackers and sliced artisan bread.

Ingredients
  

  • 1/2 8 oz can crescent roll dough
  • 1 8 oz wheel of brie
  • 1/4 cup fig jam
  • 1/4 cup dried cranberries (or fresh cranberries sliced thin)
  • 1 tsp finely chopped fresh rosemary
  • 1/4 cup chopped pecans
  • 1 lg egg

Fopr serving

  • Crostini or sturdy crackers
  • 1 bunch Grapes or figs

Instructions
 

  • Preheat oven to 400°. Line a rimmed baking dish with parchment paper.
  • Open can of crescent dough and place 1/2 of the dough on a lightly floured surface and roll with rolling pin.
  • Place brie in the center of the dough. Then spread Jam on top of the brie after add rosemary, cranberries and pecans.
  • Fold dough up to enclose cheese and filling, pleating dough to fit. Trim any excess pastry and press seams to seal. Transfer to baking pan.
  • in a bowl whisk egg with 1 teaspoon of water and brush outside of pastry with egg wash.
  • Press a few pecan halves into top of dough to decorate.
  • Bake until dough is golden brown, about 20 minutes. Let cool slightly. Serve with crackers, fresh figs and grapes, if desired.

Should I remove the rind before cooking?

You do not remove the rind, it helps to keep the cheese in shape and is edible.

Should the brie be room temperature before I bake it?

Brie can be baked right from the refrigerator and does not need to be at room temperature.

Can I make this ahead of time?

You can assemble it ahead of time and keep it in the refrigerator for 1-2 days before baking.

Can I use a different type of jelly or jam?

Absolutely! Truth be told Fig Jam can be difficult to find in stores when I remember, I buy this one to have on hand. I have used both strawberry jam and marmalade for this recipe. Both were delicious!

What goes with baked brie?

Fresh fruit, crostini, sturdy crackers, or sliced baguette pairs well. I will often garnish with rosemary sprigs and serve with a cheese knife. This baked brie recipe is the perfect addition to a charcuterie board or cheese plate.
