I am so excited to share a new to me – and now hailed – the best copycat Panera tomato soup: made keto recipe with you! I have always loved tomato soup and grew up on Campbell’s tomato soup made with milk. Yummy! It never dawned on me that I could make one that fits my Ketogenic diet lifestyle until I came across a recipe post on @onaketofast . With just a quick Google search, I wasn’t surprised to find that the recipe originated from Ruled.me, a wonderful food blog featuring Keto-friendly recipes.
Did you know that Campbell’s tomato soup has a whopping 26 grams of carbs per 1 cup. With my goal of staying under 20 grams of NET Carbs a day, Campbell’s was no longer an option. This recipe from Ruled.me has just 8.75 grams of carbs per serving, so I decided to give it a try.
Easy to make:
I found the recipe so simple to make and in the end it made the creamiest, most delicious Tomato Soup I have ever had! I was surprised to find that it tastes exactly like Panera’s Creamy Tomato Soup and by looking up Panera nutrition their soup has 36 Net carbs per serving!
For a side, I took ½ of a low carb tortilla added Mexican blend shredded cheese, roasted chicken and green onion to make a quesadilla. I sprayed each side with avocado oil cooking spray and cooked it in a fry pan just long enough to melt the cheese.
The Recipe:
Copycat Panera Tomato Soup: Made Keto
Ingredients
- 1 6 oz Can Tomato Paste
- 1 Cup Heavy Whipping Cream
- 3/4 Cup Shredded Asiago cheese
- 1/4 Cup Water
- 1 tsp Oregano
- 1 tsp Minced Garlic
- Salt and pepper to taste
Instructions
- Place your tomato paste and garlic into a soup pan.
- Bring to a boil while you continuously whisk the mixture together.
- Once it’s boiling, while stirring add in your Asiago cheese little by little. It will start to thickening up.
- Add in the water and cook for an additional 4-5 minutes.
- Top with pepper and serve.
- It is delicious with chopped green onions too.
